Burrata Bruschetta with Blistered Tomatoes
Today’s bright and bold bite — crispy bread topped with creamy burrata, sweet blistered tomatoes, and fresh basil. A flavor-packed Italian starter!
Ingredients (Serves 4)
4 slices rustic Italian bread (sourdough or ciabatta)
1 ball fresh burrata cheese (or 2 smaller balls)
1 cup cherry tomatoes
2 tbsp extra virgin olive oil (plus more for drizzling)
1 tbsp balsamic glaze
6–8 fresh basil leaves
Salt & freshly ground black pepper to taste
1 garlic clove (optional, for rubbing on toast)
Directions
Toast the bread: Brush bread slices with olive oil and toast in a hot pan or oven at 400°F (200°C) until golden. Rub with a cut garlic clove for extra flavor, if desired.
Blister tomatoes: Heat 2 tbsp olive oil in a skillet. Add cherry tomatoes and cook over medium-high heat until they begin to blister and burst (5–7 minutes). Season with a pinch of salt and pepper.
Assemble: Spread torn burrata over each slice of toasted bread. Spoon the warm tomatoes on top.
Finish: Drizzle with balsamic glaze and a bit more olive oil. Garnish with fresh basil leaves and cracked pepper.
Great for a summer appetizer or light lunch!
