 CRISPY STEAK FRITES with CREAMY PEPPERCORN SAUCE

INGREDIENTS :
For the Steak & Fries:
2 sirloin steaks (1.5" thick)
2 large russet potatoes, cut into fries
3 tbsp olive oil, divided
1 tbsp steak seasoning
1/2 tsp smoked paprika (for fries)
For the Peppercorn Sauce:
2 tbsp whole black peppercorns, lightly crushed
3 tbsp butter
2 garlic cloves, minced
1/4 cup brandy or beef broth
1 cup heavy cream
1 tbsp Dijon mustard
1/4 cup grated Parmesan (optional)
👨🍳 RESTAURANT-QUALITY STEPS:
1️⃣ Perfect Crispy Fries:
Soak potatoes in cold water 30 mins, then pat dry
Toss with 2 tbsp oil, paprika, salt
Air fry at 400°F (200°C) for 15 mins OR bake at 425°F (220°C) for 25-30 mins
2️⃣ Sear the Steak:
Pat steaks dry, rub with oil and seasoning
Sear in screaming hot pan: 4 mins per side for medium-rare
Rest 5 minutes (don't skip this!)
3️⃣ Make the Showstopper Sauce:
In same pan, melt butter, sauté garlic and peppercorns 1 min
Deglaze with brandy (flambé optional but dramatic!)
Stir in cream and mustard, simmer until thickened
Finish with Parmesan if using
