Purple Potato Dessert
Ingredients:
- 1/2 cup All-Purpose Flour (65g)
- 3 cups Glutinous Rice Flour (375g)
- 1/2 tsp Salt (2.5g)
- 1 1/2 cups Water (375ml)
- Palm Sugar
- Grated Coconut
Instructions:
1. Steam the purple sweet potatoes until soft, then mash until smooth.
2. Combine the mashed sweet potatoes, salt, flours, and water. Knead into a smooth dough.
3. Divide the dough into small pieces. Flatten each piece, add some palm sugar, and shape it into a round ball. Place on a floured surface.
4. Boil a pot of water. Add the balls in batches and cook until they float. Transfer them directly to the grated coconut and coat well.
Note: If you don't have all-purpose flour, using only glutinous rice flour works fine too.
