These Slow-Cooked Lamb Shanks are a showstopper! Perfectly tender and packed with flavor. You’ll want to make this over and over!
- Ingredients:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
1. Heat olive oil in a large skillet over medium heat. Season the lamb shanks with salt and pepper, then brown them on all sides in the skillet. Remove and set aside.
2. In the same skillet, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
3. Stir in the red wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
4. Add the beef broth, tomato paste, rosemary, and thyme to the skillet. Return the lamb shanks to the pot.
5. Transfer everything to a slow cooker and cook on low for 6-8 hours or high for 4-5 hours, until the meat is tender and falling off the bone.
6. Serve the lamb shanks with the sauce spooned over the top, garnished with fresh parsley.
